I’m inspired by so many of the bloggers I read. I devour their posts! Some days I cry after reading, and other days I’m driven to try something different. Yesterday, I read the most wonderful post by an unrefined vegan. Her post and recipe inspired by Trader Joe’s (I really wish there was a Trader Joe’s in Canada, or at least where I am!) Trail-Mix Cookies got my mind going. My Elflings were excited, too!
Cocoa Trail-mix Cookies 2 C flour* (g-free flours work well if you also add 1/2 tsp xanthan gum) 1 C oats* 2 Tbsp cocoa* 1 tsp baking powder* 1 tsp salt 1 C coconut* oil (soft-solid) 1 C brown sugar* 1/2 C sugar* egg substitute (en-R-g) for 2 eggs 2 tsp vanilla* 1/2 C flax* seeds 1/2 C raw sunflower* seeds 1/2 C salted soy* nuts (beans) 1/2 C raw pumpkin* seeds * = Organic∴ Preheat oven to 375°F/190°C. Mix your flour(s), cocoa, oats, baking powder and salt into one bowl. Set aside. Cream the coconut oil, and add the sugars. Continue to beat while adding your egg substitute (eggs) and vanilla. Blend well. Add your flour mixture, and blend thoroughly. Add your seeds and continue to mix. Drop by teaspoonful onto an un-greased cookie sheet. They don’t (normally) spread much, so you can put them about an inch apart. Bake for 8-10 minutes. Enjoy!
Here’s a pic of the batter with all the seeds thrown-in.
All mixed-up!
Ready to eat! *happy dancing*

Those look scrumptious. Like they pack a lot of good energy, too. Nice mid afternoon pick me up.
Totally. They’re pretty filling, too. =0)
Oh – do you see what she did here, folks?? She took it took the CHOCOLATE level! Yeah! Great idea – they look SO good!
I’m so weak for chocolate… it’s my kryptonite. hehe
Thank you, my friend. =0)
Oooh, I’m happy dancing too. These look yummy and easy.
Very little effort and so good. =0)
VW,
You are so clear with your recipes, and I am grateful for the pics. (I am truly clueless in the kitchen.) These are my downfall… Sweets! Now that I’m gluten-free, I am so happy to have options.
Thank you!
Uncle
Uncle,
Thank you! =0)
Chocolate is my weakness…

I have to try these with my babies! I don’t bake but these seem delicious and easy. Except when I first read the recipe I read 1 Coat….uhmmm, that’s strange. Yes, it took the time of a hicup for me to realize it was 1 Cup of OAT. Not too bright today, but maybe I can make someone have a little laugh.
Awwwe… sorry for the inadvertent confusion. =0/ *hugs*
Let me know when you make some. =0)
