I made a really nice chickpea salad the other day! It was super-easy and delicious. *happy dancing*
Chickpea Salad 1 1/2 C dried chickpeas* 2-4 cloves minced garlic* 1 handful of shredded carrots* 1 handful of chopped parsley* 1 diced green onion* 1 glug (appx. 1 Tbsp olive* oil) 1 glug (appx. 1 Tbsp maple* syrup) 1 lemon* salt and pepper* to taste * = Organic∴ Boil the dry chickpeas in water for about 3 hours to soften them. Drain, then pour them into a big bowl. Add the garlic, carrots (I like to use the carrot pulp that’s expelled from our juicer), parsley, green onions, and stir to combine. Sprinkle with salt and pepper. Roll the lemon between your hand and the counter firmly to soften and loosen the juice. Cut in half over your bowl to catch drips, and squeeze each half over your hand to catch any seeds. (My Mom used to say the one who got the lemon seed was lucky. I never felt lucky after eating a lemon seed!) Add oil and maple syrup, and stir to combine. Enjoy!
