I’ve got to share my favourite recipe for Besciamella. It almost tastes like a cheese sauce, and it’s super-versatile. It’s also my Elfling’s favourite. ♥Vegan Besciamella ♥ ½ C safflower* oil (you can use other oils, but I like the mild flavour of safflower) 1 Tbsp minced onion* ½ C flour* (buckwheat or rice flour also work) 1 tsp turmeric* 1 Tbsp coarse mustard* 1-2 cloves minced garlic* 1½ C water salt and pepper* to taste * = Organic
∴ Add oil and onion to a saucepan over medium heat. Once the onion bits begin to sizzle, toss in the flour, mustard, turmeric, and garlic. Whisk contents together to mix. Pour in the water and continue to whisk until the mixture thickens. Thin with more water, or thicken with a sprinkling of flour, to achieve your desired consistency. Add salt and pepper to taste.
