Cocoa Trail-mix Cookies

I’m inspired by so many of the bloggers I read. I devour their posts! Some days I cry after reading, and other days I’m driven to try something different. Yesterday, I read the most wonderful post by an unrefined vegan. Her post and recipe inspired by Trader Joe’s (I really wish there was a Trader Joe’s in Canada, or at least where I am!) Trail-Mix Cookies got my mind going. My Elflings were excited, too!

Cocoa Trail-mix Cookies
2 C flour* (g-free flours work well if you also add 1/2 tsp xanthan gum)
1 C oats*
2 Tbsp cocoa*
1 tsp baking powder*
1 tsp salt
1 C coconut* oil (soft-solid)
1 C brown sugar*
1/2 C sugar*
2 eggs or egg substitute (en-R-g)
2 tsp vanilla*
1/2 C flax* seeds
1/2 C raw sunflower* seeds
1/2 C salted soy* nuts (beans)
1/2 C raw pumpkin* seeds
* = Organic

∴ Preheat oven to 375°F/190°C. Mix your flour(s), cocoa, oats, baking powder and salt into one bowl. Set aside. Cream the coconut oil, and add the sugars. Continue to beat while adding your egg substitute (eggs) and vanilla. Blend well. Add your flour mixture, and blend thoroughly. Add your seeds and continue to mix. Drop by teaspoonful onto an un-greased cookie sheet. They don’t (normally) spread much, so you can put them about an inch apart. Bake for 8-10 minutes. Enjoy!
