Oatmeal Date Cookies

I was craving Oatmeal Cookies today, so I made it part of our Homeschool lessons. Maths/Sci/Chemistry with Cookies is awesome!

Oatmeal Date Cookies
1C butter (or margarine), softened
3/4 C packed brown sugar
2 eggs (or substitute)
1tsp vanilla extract
1C chopped dates
1 1/2C flour
1tsp baking soda
1tsp cinnamon
1tsp salt
3c oats
Preheat oven to 350°F (175°C).
In a large bowl, cream together the butter, sugar, eggs and vanilla. Stir in the dates dates. In a separate bowl, mix the flour, soda, cinnamon, salt, and oats. Blend dry ingredients into butter mixture. Drop by teaspoonful onto cookie sheet. Bake 10-12 minutes. Enjoy!
