I’m way more adventurous with vegan cooking than I’ve ever been before. I’ve never really shied away from trying new things, but I have been guilty of slipping into cooking ruts. /blush
Tonight I kind of left things to the last minute. Yes, I’m such a bad woman! I already know this. Anyway, it can be fun to fly by the seat your pants once in a while…
I started a pot of water to boil for rice pasta, and soaked some broccoli and red carrots in a bowl of hot water.
While waiting for the water to boil, I diced an onion and sauteed it in some coconut oil. Once the onion was translucent, I added salt, pepper, cumin, turmeric and stirred it all around. Once it was all incorporated, I added 1/4 C of brown rice flour and 1/4 C nutritional yeast. After I mixed it all together, I added a cup of water and continued to whisk the mixture until it was thick. I then added a heaping soup-spoon of salsa and stirred it around.
Un’ Cheese Sauce on the Fly.
I tossed the broccoli and red carrots in with the noodles to warm while I made the supper smoothie.
Smoothie taken care of and poured. Yay!
I drain the noodles and veg, then add my un’ cheese sauce. Voila!
This was a huge hit! Vegan Mac un’ Cheese FTW!
