Hardcore Granola

Raw Granola is my new favorite thing to make lately… other than Tofu Tacos and Tortillas, or Cookies! I never seem to make enough for a whole week, though. This latest batch is my favorite by far. It’s GOT to be the addition of dates. Yummy, yummy dates!

Hardcore Granola
2 C oats*
1 C chia* seeds
1 C flax* seeds
1 C raw pumpkin* seeds
1/2 C cacao* nibs
1 C raw pecans*
1 C raw almonds*
1 C dried cranberries*
1 C chopped dates*
1/2 C maple* syrup
1/2 C water
1 Tbsp cinnamon*
= Organic

∴ Add your oats, seeds, nibs, nuts, fruit, syrup, water and cinnamon to a bowl. Mix well. If it seems too dry, you can add a little more (couple Tbsp – 1/2 C) water. The chia seeds especially will absorb any excess. Press it all into a 9×13 pan and let it chill in the fridge to set. Break it all up and store in a container with a lid that fits decently-well. Store it in the fridge. Super-good with milk of your choosing, over Chia Pudding, as is, or with fresh fruit.

I had some today with sliced strawberries and bananas. It was awesome!
