My Elflings have picked this recipe as their favorite. It’s easy for them to follow, and super-easy to double, triple, or whatever for however many cookies you may need/want. ;0)My Elfling’s Best Chocolate Chip Cookies 2 C flour* (rice, quinoa, buckwheat, etc) 1 tsp baking powder* 1 tsp salt 1 C veggie butter* (Earth Balance) 1 C packed brown sugar* ½ C sugar* 3 tsp En-R-G egg replacer 8 Tbsp water 2 tsp vanilla* 1 package *chocolate chips/chunks * = Organic
∴ Preheat oven to 375°F/190°C/Gas Mark 5. Mix flour, baking powder and salt in a bowl. Stir with a whisk to blend, and set aside. In a larger bowl, cream the butter until fluffy. Gradually beat in sugars. Blend in egg replacer, water and vanilla. Add chocolate chips, and fold together. Stir in flour mixture until well-blended. Drop by teaspoonfuls onto un-greased cookie sheet, about 1″ apart. Bake for 8 minutes, or until lightly browned. Makes about 3 dozen.
