Spice Quenelles and Noel Nog

Spice Quenelles

I made Spice Quenelles today with my Elflings. They are so yummy, and especially nice with a glass of Noel Nog. ♥

Spice Quenelles
1 C margarine* (Whipped Organic Earth Balance, etc.)
¾ C brown sugar*
¾ C sugar*
1½ tsp En-R-G egg replacer (other substitutes’ measurement will vary)
3 Tb So Nice Noel Nog
2½ C flour*
½ tsp salt
2½ Tb pumpkin spice*
1 Tb cornstarch*
* = Organic

 Preheat oven to 375°F/190°C/Gas Mark 5. Add margarine and sugars to your mixer. Blend until mixture begins to lighten. Add replacer and nog. Continue mixing. Add flour, salt, pumpkin spice, and cornstarch to a separate bowl. Whisk gently to combine. Slowly add dry ingredients to sugar mixture until well-blended. Shape into quenelles, or drop by spoonfuls, about a half-inch apart. If you’d like to roll some out and cut shapes, place the dough in a covered dish and chill for about an hour. Bake for 8-10 minutes. Enjoy!
