Spinach Biscuits

Our yummy Spinach Biscuits from lunch. They were super-good, and came together pretty quick. I was craving garlic biscuits, so we whipped these up.

Biscuits
2 C flour*
3 tsp baking powder*
2 Tbsp nutritional yeast
1 tsp salt
2 Tbsp olive* oil
2 minced garlic* cloves
1 handful chopped parsley*
1 minced green onion*
1 C warm water
* = Organic

 Preheat oven to 450°F/232°C. Add flour, baking powder, nutritional yeast, and salt to bowl. Stir it up with a whisk. Add oil, garlic, parsley, and green onions to the mix. Continue to whisk. Pour water in, and bring the mixture together with a spatula until it’s formed a ball. Knead the ball on a floured-surface for 5 minutes. Flatten with your hands or a rolling pin, and cut out your biscuit shapes. Bake in an un-greased pan for 15 minutes. Enjoy!

The Stuff My Mom Says

A few days ago, my mom and I were on a site called Fonts.com. It was late and we where a little bit over-tired. On the site however, we saw so many strange, cool, funny, crazy fonts and font names… Mostly crazy font names. We saw many like “name”-handwriting or “name’s”-hand, and my mom would say something like: <insert goofy voice here> “That’s not your hand! Oy vey! Vhere do dey keep getting all dese hands from?” <scratches head like monkey> Or, “I don’t know vere dat hand vas, but I do know whoever’s hand dat is, he needs it bick!”

We stumbled upon things such as “Dick’s Handwriting.” My mom would laugh and say <squeaky weirdo voice> “Vhat da! I didn’t know Dick had handvitingk!?” Or the “Flappy Bum Handwriting.” We looked at each other and laughed. She said <same voice effect> “Vhat!? I didn’t…

Potato and Quinoa Salad

I’m a sucker for potatoes, and I especially adore potato salad. This is the one I’m really loving lately…

Potato & Quinoa Salad
6-8 potatoes*
1/2 C quinoa*
2 tomatoes*
2-3 cloves minced garlic*
1 handful of minced parsley*
1/2 C diced cucumber*
1 Tbsp dill*
1 glug olive* oil
1 lemon*
salt and pepper* to taste
* = Organic

Cut potatoes into 2″ chunks (mouthful-size). Boil potato chunks until fork-tender. Drain and put into a large bowl. Set aside. Cook quinoa (1/2 C quinoa and 1/2 C water; bring to a boil; reduce heat to minimum; cover for 10 minutes). Add cooked quinoa to bowl. Dice tomatoes, and add them to the bowl. Mix in garlic, parsley, cucumber, dill and olive oil to the bowl, too. Roll the lemon firmly between your hand and the counter. Cut the lemon in half over the bowl, and squeeze the juice from both halves over your fingers into the bowl. Add salt and pepper. Stir it all together. Enjoy!
