I decided to make the Homeschool lesson for today about co-operation. My Elflings were taking turns vacillating between being helpful and being persnickety, so we voted on something to make. It was unanimous for cookies! I put the eldest of the three in charge, and sat at the table, sipping my coffee, willing and able to help if needed.
Cocoa-Mocha Quenelles 2 C flour* (rice, quinoa, buckwheat, etc) 1 tsp baking powder* 1 tsp salt 1 C butter* 1 C packed brown sugar* ½ C sugar* 2 eggs or En-R-G egg replacer 2 Tbsp strong coffee* 2 tsp vanilla* 2 Tbsp cacao* powder * = Organic∴ Preheat oven to 375°F/190°C/Gas Mark 5. Mix flour, baking powder, salt and cacao in a bowl. Stir with a whisk to blend, and set aside. In a larger bowl, cream the butter until fluffy. Gradually beat in sugars. Blend in egg or replacer, coffee and vanilla. Stir in flour mixture until well-blended. Drop by teaspoonfuls (or form quenelles) onto un-greased cookie sheet, about 1″ apart. Bake for 8 minutes, or until lightly browned. Makes about 3 dozen.
I helped with making the quenelles: Step 1 – with a small amount of dough and two teaspoons, alternate scraping the dough from one teaspoon to the other, turning and shaping the dough into a tri-sided, lovely little shape.
Making quenelles: Step 2 – you’ll get the hang of it, and they’re so pretty when you’re done, it’s worth the effort.
They’re just so tempting for my cookie dough-loving Elfling!
Neat and tidy rows of lovely, little quenelles.
This is one of these best treats ever – Cup of Coffee and Cocoa-Mocha Quenelles. Delicious!
I wonder how long these will last? My best guess is 24 hours. ;0)
But what about the persnickety Elflings? I ended our lesson with a little history on Ring Around the Rosie and Black Plague. I do love to hear them singing. ♥
Wait – how did I miss THESE?? Yum and so cute! I cannot do that with thang with the spoons, however…

My middle Elfling “let me” keep making the quenelles after I showed her how. “You’re a pro, Mom!”
It’s all good… they taste great any shape they’re in. =0)

Wau lucky little Elflings they are :o) Do you by any chance have room for a bigger Elfling, like a hungry bigger Elfling :o? All your food looks so darn good.

Yummy, yum yum.
You have very good hand co-ordination with the spoon trick. That looks like it takes practice. Might give that a whirl.
If the biscuits are smaller, does that mean we can have more? :)
Didn’t realise the origin of “Ring a round the rosie,” but then many of the rhymes and children’s tales have quite nasty beginnings.
