I decided to make the Homeschool lesson for today about co-operation. My Elflings were taking turns vacillating between being helpful and being persnickety, so we voted on something to make. It was unanimous for cookies! I put the eldest of the three in charge, and sat at the table, sipping my coffee, willing and able to help if needed.

Cocoa-Mocha Quenelles
2 C flour* (rice, quinoa, buckwheat, etc)
1 tsp baking powder*
1 tsp salt
1 C butter* 
1 C packed brown sugar*
½ C sugar*
2 eggs or En-R-G egg replacer
2 Tbsp strong coffee*
2 tsp vanilla*
2 Tbsp cacao* powder
* = Organic

 Preheat oven to 375°F/190°C/Gas Mark 5. Mix flour, baking powder, salt and cacao in a bowl. Stir with a whisk to blend, and set aside. In a larger bowl, cream the butter until fluffy. Gradually beat in sugars. Blend in egg or replacer, coffee and vanilla. Stir in flour mixture until well-blended. Drop by teaspoonfuls (or form quenelles) onto un-greased cookie sheet, about 1″ apart. Bake for 8 minutes, or until lightly browned. Makes about 3 dozen.

I helped with making the quenelles: Step 1 – with a small amount of dough and two teaspoons, alternate scraping the dough from one teaspoon to the other, turning and shaping the dough into a tri-sided, lovely little shape.

    Yummy, yum yum.
    You have very good hand co-ordination with the spoon trick. That looks like it takes practice. Might give that a whirl.
    If the biscuits are smaller, does that mean we can have more? :)
    Didn’t realise the origin of “Ring a round the rosie,” but then many of the rhymes and children’s tales have quite nasty beginnings.
